RECIPE: Chilled Creamy Mint Pea Soup

Pea Soup

This soup is ridiculously easy and unbelievably refreshing.  Pretty soon fresh peas will be out and you should definitely substitute fresh pees for the frozen when you can (nothing beats that flavor), but otherwise organic frozen peas will do.  This is a fantastic soup to bring on a picnic!

 

Yields 6 appetizer portions

 

Ingredients:

 

  • 1 bag organic frozen peas
  • 2 tablespoons extra virgin olive oil or coconut oil
  • 1-2 cloves garlic
  • 2 shallots (sub 1/2 sweet onion if you can't find shallots)
  • 1 ripe avocado
  • 1 bunch mint (I like spearmint)
  • 4 cups vegetable broth (make your own using veggie scraps)
  • 1 teaspoon unrefined sea salt
  • freshly ground pepper
  • pumpkin seeds, optional for garnish

 

Step-by-step:

 

  1. Heat oil in a pot
  2. Add garlic and shallots or onion and cook 4-5 minutes until translucent
  3. Add peas and stock and let it come to boil
  4. Simmer for 5-7 minutes or until peas are cooked
  5. Transfer everything from pot and add avocado (pit removed) and mint leaves to blender or use immersion blender in your pot and blend until smooth
  6. Add more salt & pepper to taste
  7. Refrigerate and enjoy cold with a few pumpkin seeds sprinkled on top
